Roasted Vegetable Pasta with Goat Cheese
Ingredients:
8-oz. box of VitaSpelt Penne Pasta
2 cups asparagus, sliced
diagonally
2 cups broccoli florets
2 cups carrots, sliced
4-oz. package of crumbled
goat cheese
2 Tbsp. olive oil
1/4 cup fresh basil, chopped
1 1/2 tsp dried Italian herbs
Directions:
Preheat oven to 425 degrees. Cut vegetables up into bite size pieces and toss with olive oil, salt, pepper, and herbs.
Place vegetables on a baking sheet, roast for 30 minutes.
Meanwhile in a pot of boiling water, cook pasta according to package directions. Drain and toss with roasted vegetables, sprinkle with sea salt and freshly ground pepper to taste. Put crumbled goat cheese over the top and serve.
