Creamy Potato Leek Soup
Ingredients:
6 cups vegetable broth
3 leeks, chopped
3 celery stalks, chopped
4 russet potatoes, chopped
1 green onion, chopped
1 cup Silk® Original Soymilk, Light
1/4 cup Parmesan cheese, grated
2 Tbsp. butter
salt and pepper
Directions: In a large saucepan combine broth, leeks, celery and potatoes. Bring to a boil and cook until potatoes are tender. In a blender puree ingredients. Put puree back in a saucepan and add butter, Silk Soymilk, salt and pepper. Heat. Garnish with Parmesan cheese and green onions.
